■What is Yonaki Soba?
It became popular during the Edo period (about 400 years ago) as a simple meal to eat when you feel hungry in the middle of the night.
One theory about the name "Yonaki Soba" is that it was so named because a soba stand would appear in the middle of the night and ring wind chimes to alert customers.
